Ingredients
COOKIES & CREAM TART
Crust:
- 2 cups almond flour
- 1 tbsp unsweetened cocoa powder
- 3 tbsp butter, melted

Method
- Preheat the oven to 350 F and prepare an 11” tart pan with non-stick spray.
- In a food processor, pulse the flour and cocoa powder together until combined.
- Add in the melted butter and pulse until the mixture resembles sand.
- Press the mixture into the bottom and up the sides of the tart pan. Bake for 7-8 minutes. Let cool.
- Cut the protein bar into small pieces and place them into a microwave safe bowl along with 3 tablespoons of heavy cream. Microwave for 15 seconds, stir smooth.
- Add the remaining heavy cream into a small pot over medium heat and bring to a boil.
- Pour the hot heavy cream over the chocolate chips in a heatproof bowl.
- Let sit for 4 minutes, add in the melted Quest bar and stir smooth.
- Pour the mixture into the prepared crust and let cool for 30 minutes before chilling for 2 hours.
- Whip up the heavy cream for the topping and then add in the protein powder.
- Spread the mixture in an even layer over the top of the tart and top with crushed cookie pieces.
- Cut into 18 slices and serve.
